Gemara:
מאי אבל לא במדה
אמר רבא שלא יזכור לו שם מדה אבל כלי העומד למדה ימלאנו

What is meant by "but not in measure?"
Rava said: That he should not mentioned to him the name of the measure, but a vessel which stands for measuring he may fill.

אדבריה רב חסדא לרב עוקבא ודרש לא ימדוד אדם שעורים ויתן לפני בהמתו אבל קודר הוא קב או קביים ונותן לפני בהמתו ואינו חושש
פירוש קודר משער באומד דעתו
והנחתום מודד תבלין ונותן לתוך הקדרה בשביל שלא יקדיח תבשילו
Rav Chisda directed Rav Ukva and expounded: One should not measure barley and place it before his animal, but he may koder a kav or 2 kav, and place before his animal, and not worry.
To explain koder - to measure by estimating.
And the baker may measure spices and place them into the pot, so that his cooked food does not become too spicy.

אמר ר' יהודה בר אבא אמר רב מודדת אשה קמח לעיסתה כדי שתטול חלה בעין יפה
ושמואל אמר אסור
והא תנא דבי שמואל מותר
אמר אביי השתא דאמר שמואל אסו' ותנא דבי שמואל מותר שמואל הלכה למעשה אתא לאשמועי' דאסור
וכן הילכתא
Rav Yehuda bar Abba cited Rav: A woman may measure flour for her dough such that she can separate off challah with a generous eye.
And Shmuel said: It is forbidden.
But they taught in the academy of Shmuel that it is permitted!

{Beitza 29b}
Abaye said: Now that Shmuel said that it is forbidden and they taught in the academy of Shmuel that it is permitted, Shmuel came to inform us that halacha leMaaseh it is forbidden.
And so is the halacha.

ת"ר אין שונין קמח ביו"ט
משום רבי פפום ומשום רבי יהודה בן בתירא אמרו שונין
ושוין שאם נפלו לתוכו צרור או קיסם ששונין

The Sages learnt {in a brayta}: We may not resift flour on Yom Tov.
In the name of Rabbi Papus and in the name of Rabbi Yehuda ben Beteira they said: We may resift.
And they are alike that if a pebble or splinter fell into it, we may resift it.

דביתהו דרב יוסף ההו נהלה קימחא אגבא דמהולתא
אמר לה הוי דאנא ריפתא מעליתא בעינא מינך
The wife of Rav Yosef would resift flour on the back of a sieve.
He said to her: It is that I desire fine bread from you {and know that resifting normally is permitted}.

דביתהו דרב אשי הוה נהלה קימחא אגביה דפתורא
אמר רב אשי הא דידן ברתיה דרמי בר חמא היא
ורמי בר חמא הוה שכיח קמיה דרב פפי מרי דעובדא ואי לאו דחזאי בבי נשא לא הוה עבדה
The wife of Rav Ashi would resift flour on the underside of the table.
Rav Ashi said: This {wife} of ours {of mine} is the daughter of Rami bar Chama
And Rami bar Chami was commonly before Rav Papi {our gemara omits "was commonly before Rav Papi"} who was very meticulous in action, and if he did not see it in her father's home, she would not have done it.

ת"ר הולך אדם אצל רועה הרגיל אצלו ואומר לו תן לי גדי אחד או טלה אחד
אצל טבח הרגיל אצלו ואומר לו תן לי כתף אחד או ירך אחת
אצל פטם הרגיל אצלו ואומר לו תן לי תור אחד או גוזל אחד
אצל נחתום הרגיל אצלו ואומר לו תן לי ככר אחד או גלוסקא אחת
אצל חנוני הרגיל אצלו ואומר לו תן לי עשרים ביצים או חמשי' אגוזים ועשרה אפרסקין חמשה רימונים ואתרוג אחד ובלבד שלא יזכיר לו סכום מקח
ר"ש בן אלעזר אומר ובלבד שלא יזכיר לו סכום מנין

The Sages learnt {in a brayta}: A person may go to his regular shepherd and tell him "give me one goat," or "one sheep" {and not specify size}; to his regular butcher and tell him "give me one shoulder" or "one thigh"; to his regular {poultry} fattener and tell him, "give me one dove" or "one pigeon"; to his regular baker and tell him, "give me one loaf," or "one roll"; to his regular shopkeeper and tell him, "give me 20 eggs" or "50 nuts," and "10 peaches," "five pomegranates," and "one etrog," so long as he does not mention the total of the purchase - sikkum mekach {our gemara: sikkum middah}.
Rabbi Shimon ben Eleazar says: So long as he does not mention the total of the amount - sikkum minyan.

פירוש סכום מקח כגון שיש עליו כסף לא יאמר לו תן לי בכסף ויש לך עלי כסף אחר הרי יש לך בידי שני כספים
וסכום מנין לא יאמר לו הרי יש לך בידי חמשים אגוזים תן לי חמשים אחרים והרי יש לך בידי מאה

The explanation of sikkum mekach is such that he owes him one kesef, he should not tell him, "give it to me for a kesef, and you have upon me {=I owe you} another kesef -- thus I have of yours in my hand {=I owe you} two kesef. {Thus, he should not mention his running tab.}
And sikkum minyan - He should not tell him: Behold I have of yours in my hand 50 eggs; give me 50 others, and I will have of yours in my hand 100.
