12a

{Beitza 22b continues}
Mishna:

אף הוא אמר שלשה דברים להקל מכבדין בין המטות ומניחין את המוגמר ביו"ט ועושין גדי מקולס בלילי פסחים וחכמים אוסרין
He {=Rabban Gamliel} also said three lenient things: We sweep between the beds {at the table} and we place incense {on burning coals} on Yom Tov, and we make a gedi mekulas {a roast whole goat with its entrails} on the night of Pesach.
And the Sages forbid {in all three cases}.

Gemara:
אמר רב אסי מחלוקת להריח אבל לגמר הבית או הכלים דברי הכל אסור
Rav Assi said: The dispute is for fragrance, but to perfume the house of clothing, all say it is forbidden. {Following the gemara's emendation of Rav Assi's statement.}

איבעיא להו מהו לעשן
פירוש מהו לעשן את הפירות כדי להכשירן לאכילה
אמר רב יהודה על גבי גחלת אסור מפני שהוא מכבה
על גבי חרס מותר
ואסיקנא רבא אמר ע"ג גחלת נמי מותר מידי דהוה אבישרא אגומרי
וכן א"ר אשי לעשן שרי מידי דהוה אבשרא אגומרי
וכן הילכתא

It was a question to them: May one smoke?
To explain: May one smoke the fruits in order to prepare them for eating {on Yom Tov}?
Rav Yehuda said: Upon a coal it is forbidden because he extinguishes; upon pottery it is permitted.

And we conclude: Rava said: Upon a coal it is also permitted, just as is true regarding {roasting} meat on coals.
And so Rav Ashi said: To smoke, it is permitted, just as by meal on coals.
And so is the halacha.

גרסינן בפרק ר"א אומר אם לא הביא כלי
ת"ר אין מסננים את החרדל במסננת שלו ואין ממתיקים אותו בגחלת והתניא ממתיקין אותו בגחלת לא קשיא כאן בגחלת של מתכת כאן בגחלת של עץ
אמר ליה אביי לרב יוסף מאי שנא מבישרא אגומרי
א"ל התם ליכא כבוי הכא איכא כבוי

We learn in perek Rabbi Eliezer Omer Im Lo Heivi Keli {Shabbat 134a}:
The Sages learnt {in a brayta}: We do not strain mustard seed in its own strainer, nor may we sweeten it with a coal.
But we learnt {in another brayta}: We may sweeten it with a coal!
This is no contradiction. Here with a coal of metal, here with a coal of wood. {In the latter case it is forbidden.}
Abaye said to Rav Yosef: How is this different than meat on coals {which is permitted}?
He said to him: There there is no extinguishing, whereas here there is extinguishing.
{Note: This is quite a different girsa than our Bavli there, where Rav Yosef's answer is:
א"ל התם לא אפשר הכא אפשר
"That is, in that case, it is impossible [to have done it before Yom Tov], whereas here it is possible."'
This is the same answer we have below about making cheese.
This girsa difference is significant, for the simple reading of our gemara in Beitza is that Rava argues with Rav Yehuda and permits even on coals which would be extinguished. Yet according to the Rif's girsa here, it is only regarding coals that would not be extinguished.

Abaye inquired of Rabba:

בעא מיניה אביי מרבה מהו לגבן
א"ל אסור
ומאי שנא מלישה
התם לא איפשר הכא איפשר

והא אמרי נהרדעי גבינתא בת יומא מעליא
הכי קאמר אפילו בת יומא מעליא

Abaye inquired of Rabba {our gemara: of Rav Yosef}: May one make cheese {on Yom Tov}?
He said to him: It is forbidden.
And how is this different from kneading?
{Our gemara: He said to him:} There {by kneading} it is not possible {to do it before Yom Tov}; here, it is possible.

But the Nehardeans say that cheese made that day it excellent! {and thus to get the best cheese, one needs to make it that same day, on Yom Tov!}
This is what it means to say: even made that cheese is excellent.

{Beitza 23a resumes}

וקיטורי בי ידיה מעשה אומן הוא ואסור
שמענו בפירושו בלשון ערבי תפרי"ך אלאכמ"ס
וי"א שהן עישון בית הידים
And kiturei bei yedei is the work of a craftsman and is forbidden.
We have heard that its explanation in Arabic is tafrich al-achmas.
And some say it is perfuming gloves.

{Presumably the first explanation was making pleats and folds in gloves.}
