Mishna:

מי שהפך את זיתיו וארעו אבל או אונס שהטעוהו פועליו טוען קורה הראשונה ומניחה לאחר המועד דברי רבי יהודה
רבי יוסי אומר זולף וגומר וגף כדרכו

וכן מי שהיה יינו בתוך הבור וארעו אבל או אונס או שהטעוהו פועליו טוען וזולף וגומר וגף כדרכו דברי רבי יוסי
רבי יהודה אומר עושה לו לימודים בשביל שלא יחמיץ

If one has turned his olives and he suddenly becomes a mourner, or some accident, that his that his workers failed to show up, he presses the first pressing and then leaves it to after chol haMoed. These are the words of Rabbi Yehuda.
Rabbi Yossi says: He may put the olives into the oil-press and finish pressing them, and bung up the casks in the usual manner.

{Moed Katan 12a}
And so too, one whose wine was in the put, and he suddenly becomes a mourner, or some accident, or that his that his workers failed to show up, he may put the olives into the oil-press and finish pressing them, and bung up the casks in the usual manner. These are the words of Rabbi Yossi.
Rabbi Yehuda says: He constructs boards to cover it so that it does not turn sour.

פתח באבל וסיים במועד
אמר רב שישא בריה דרב אידי זאת אומרת דברים המותרין בחולו של מועד אסור לאבל לעשותם בידו בימי אבלו אלא אחרים עושין לו
תניא כותיה דרב שישא בריה דרב אידי דברים שעושין לאבל בימי אבלו כגון זיתיו להפוך וכדו לגוף ופשתנו לעלות מן המשרה וצמרו לעלות מן היורה מרביצין לו שדהו משתגיע עונת המים שלו האריסין והחכירים והקבלנים לשדה שלו הרי אלו יעשו החמרין והגמלים והספנין בספינה שלו הרי אלו לא יעשו ואם היו מוחכרין או ממושכנים או מושכרין אצל אחרים מעיקרא הרי אלו יעשו.

It began with mourning and ended with chol haMoed?
Rav Shisha son of Rav Idi said: This says that things which are permitted on chol haMoed are forbidden for a mourner to perform during his days of mourning, but rather others should do them for him.

The donkey drivers, camel drivers, and sailors of his should not work {should not hire out}. And if they sharecrop by other, are pledged or hired by others initially, they may do.

שכיר יום אפילו בעיר אחרת לא יעשה היתה מלאכת אחרים בידו בין קיבולת בין שאינה קיבולת לא יעשה היתה מלאכתו בביתו ביד אחרים לא יעשה בבית אחר יעשה

One hired for the day, even in another city, should not do {work}. If the work of others was in his hand, whether contracted or not, he should not do it. If the work was in his house, in the hands of others, they should not do it. In another house, they may do it.
